Winter is the perfect time to enjoy delicious and comforting soups. French Onion Soup is a classic winter soup that is known for its rich flavors and comforting warmth. Here’s a simple recipe for French Onion Soup that you can try:

French Onion Soup Classic Recipe

Ingredients:

4 large onions, thinly sliced
4 tablespoons butter
2 tablespoons olive oil
2 cloves garlic, minced
4 cups beef broth
1 cup dry white wine (optional)
1 bay leaf
2 sprigs thyme
Salt and black pepper to taste
Baguette slices
Gruyere cheese, grated

Instructions:

In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook for about 30 minutes, stirring occasionally, until the onions are caramelized and golden brown.

Add the minced garlic and cook for an additional 1-2 minutes.

Pour in the beef broth and white wine, if using. Add the bay leaf and thyme sprigs. Season with salt and black pepper to taste.

Bring the soup to a simmer and let it cook for about 20-30 minutes to allow the flavors to meld together.

While the soup is simmering, preheat your broiler. Place the baguette slices on a baking sheet and toast them until golden brown.

Ladle the soup into ovenproof bowls, leaving some space at the top. Top each bowl with a couple of toasted baguette slices.

Sprinkle a generous amount of grated Gruyere cheese over the top of each bowl.

Place the bowls under the broiler until the cheese is melted and bubbly, about 2-3 minutes.

Carefully remove the bowls from the oven and let them cool for a few minutes before serving.

4 dates (about 32-35 g)

Method

First, soak the dates into warm water (for about 20 minutes).

Drain and add them to the mixture along with the almonds.

Beat well until they become a homogeneous mixture.

Form balls with the mixture and shape them with a fork. Bake in a preheated oven at 180 degrees for 12-15 minutes

Recipe For Vegan Cold Avocado Soup

 

Preparation time: 10 minutes
Vegan, Gluten-free

Ingredients for 2 people

500 gr. ripe avocados
200 gr. yogurt (vegan, greek style)
5 tbsp. lime juice
14 mint leaves
Cayenne pepper
200-230 ml of water
1 ice cube
salt

For garnish

2 radishes, in small cubes
6 cherry tomatoes, in small cubes
1/2 green pepper, in small cubes
mint leaves

Method

Peel the avocados and put them in a blender with the yogurt, lime juice, and ice cube. Melt them well, add the mint, and mash until the mixture is smooth.

Slowly add the water, until it reaches the density you like. Be careful not to get too fluid!
Add salt and cayenne pepper, and mix well
Store in the refrigerator until served.

Serve in a bowl and garnish with the diced vegetables and mint leaves.

This is the best mushroom risoto recipe you will ever make! Creamy, tasty, and gluten-free – simply unforgettable!

Mushroom Risoto Recipe

Ingredientsmushroom risoto

   1 cup chicken broth
  1/2 cup of water
  4 teaspoons olive oil
  1 +1/4 cups of fresh mushrooms
  1/4 cup of chopped onion
  6 tablespoons wild rice
  2 cloves garlic, finely chopped
  1 (300 gr.) Sliced chicken breast
  Non-stick cooking spray
  2 tablespoons Parmesan cheese
 1 teaspoon chopped fresh thyme

  • 1 thin lemon peel
       Pepper and salt

Method

  • Put the broth and water in a small saucepan. Heat at high temperature until warm but not boiling. Reduce heat to low. Keep it warm.
    Heat 3 teaspoons of butter in a saucepan over medium heat and add mushrooms and onions. Cook 4΄ until the vegetables are soft.
    • Add wild rice and garlic and stir for 5΄ minutes, stirring frequently. Reduce heat to medium-low.

• Simmer, uncovered, 6-7΄ until the rice absorbs the liquid.

• Carefully add a cup of hot broth to scrape the brown pieces from the bottom of the pot. Bring to a boil and reduce heat.

• Add another 1/2 cup of the broth mixture. Cook and stir at 6 to 7΄ until the liquid is absorbed.

• Continue to add broth mixture, ½ cup at a time, and cook until all the liquid is absorbed, adding more and stirring often. (This will take a total of 25 to 30 minutes.)

• Mix the peas with the final addition of the broth.

Meanwhile, cover a large non-stick pan with cooking spray over medium heat. Add the chicken. Cook for about 6΄ until the chicken is golden brown, turning up and down. Cut the chicken into 1.5 cm thick slices.

• When the rice is fully cooked but slightly firm, remove from the heat. Mix the remaining 1 teaspoon of butter, parmesan, and thyme.
Sprinkle with lemon peel.

Ingredients:

• 2 eggs

1 teaspoon olive oil

• 75 g cherry tomatoes, cut in half

• 50 g onion, sliced

• 2 cups spinach

• 100g cottage cheese ( 2% fat)

• Salt and pepper

• 1 tablespoon water

• 200 g ham (3% fat)

• 1 slice of bread ( 30g)

• Heat the oil over medium-high heat

• Put 1 tablespoon of water under the omelet

 • Beat the beaten eggs with the ham (salt-pepper) and reduce heat to medium

• Add tomatoes and onion and cook until to soften, 1 to 2

• Heat the oil in the pan (medium-high heat).

• Sprinkle the cheese on top of the omelet.

• Cover the pan until it is ready and the cheese is melted ( for about 2-3 minutes)

 •  Cut the ham into strips, fold the omelet, and put it in between
